Bean Soup

INGREDIENTS:
1
pound (16 ounces) dried garbanzo beans
10
cups water
1
cup chopped celery
1
cup chopped onion
1
large ham hock
Salt
and pepper to taste
2
cups diced potatoes
1/2
pound pepperoni, sliced
1/2
pound Keilbasa and/or Italian sausage, sliced
3
cloves garlic, crushed
TO
PREPARE:
1.
Soak beans in water overnight.
2.
Bring beans to a boil, then turn off heat. Let stand 1 hour.
3.
Add celery, onion, ham hock, salt, and pepper. Simmer, covered, 5
to 6 hours until beans are tender, but not mushy. Do not overcook.
4.
Add potatoes, pepperoni, sausage and garlic. Simmer 1 hour longer.
Adjust seasonings to taste.
YIELD:
8 to 12 servings
