Well, you could, but then you would be incapable of neutral turns.  I think
the best way would be to make two bars
connected to a proportional degree sensor, then have each one wired to a
separate ESC.  This would not only be less complex, but
would really give the "Tank" feel. Then, you could have a 10 position handle
that would cap then speed, 10 being fastest, 1 slowest. Then, you have
proportional throttle control within certain parameters.  This is how it
works on older style caterpillars.
