I believe the standard way of telling cmake to use a different boost
installation is with the variable BOOST_ROOT
in your case this would probably translate to:
cmake .. -DCMAKE_INSTALL_PREFIX=/home/user/Tools/cinfony/tree
-DBOOST_ROOT=/home/user/Tools/cinfony/tree
