They'll do the job. I've been switching all my projects over to use the built-in toolbars, and I've been reasonably happy. The biggest gotcha that I found was the differences in the masks between Mac and Windows. OS X will happily use an 8-bit mask for your icons, but Windows XP (haven't tested Vista - still waiting for my disc to arrive) will only use a 1-bit mask, so you'll need to store two separate sets of images for the different platforms. Other than that, I can't say that I've had many problems.
