I've had decent results (using the term loosely) encoding high motion video
w/ voice & background music using the following settings in G2:

Options > Preferences > SureStream > Emphasize Video
Options > Video Capture Settings > Source:
   - Composite 1
   - NTSC-M
Options > Video Capture Settings > Format:
   - Color Format > YUV12 planar
   - Video Size > 1/4 qcif
   - Proportions > Standard
Options > Video Capture Settings > Configuration:
   - Direct Draw enabled (both primary/secondary)

Video Codec > 28/56k > Normal Motion Video > 15fps
Audio Codec > 28/56k > Voice Only > 4.0kHz

Hardware > NT4 > sp4 > dual 300pII's > 128MB ram > Osprey 100

The lower the frame rate the better the video from what I can tell. Hope
