Apple Dumplings in Sorghum Sauce Second place -- Desserts Wilma Smith

6 medium apples
 1 1/2 teaspoons baking powder
 1/2 cup shortening
 1 tablespoon butter
 1 tablespoon lemon juice
 2 cups flour
 3/4 teaspoon salt, divided
 1/3 cup milk
 1/2 cup sorghum molasses

Pare, core and chop apples. Mix flour with baking powder and 1/2 teaspoon
salt; cut in shortening; add milk; mix until soft dough is formed. Roll
dough
into a 12- by 8-inch rectangle; cut into six squares. Place 1/2 cup apples
in each square. Combine butter, sorghum, lemon juice and 1/4 teaspoon salt;
blend well; spread over apple-filled squares. Moisten edges of dough with
cold water. Bring four corners of dough over apples; press edges firmly
together.
Place in a greased 10- by 10- by 2-inch pan.

Sauce:
 3/4 cup sorghum molasses
 2 tablespoons shortening
 1/4 teaspoon cinnamon
 2 tablespoons butter
 1/4 teaspoon salt
 1/4 teaspoon nutmeg
 1 1/2 cups water

Combine sorghum, butter, shortening, salt and water; bring to a boil; boil
for 5 minutes. Pour over dumplings. Sprinkle with cinnamon and nutmeg. Bake
at
400 degrees for 30-35 minutes.
