Honey Sweet Potato Salsa
Ingredients
1/4 cup butter
1 lb. sweet potatoes, peeled and diced
1/4 cup finely chopped sweet yellow onion
1/2 cup toasted pecans
1/2 cup dried cranberries
1/2 cup honey
1 teaspoon cinnamon
salt, to taste
Preparation
Melt butter in large skillet. Add sweet potatoes and onion; stir-fry
over high heat until potatoes are tender.
Add remaining ingredients; heat through.
Serve salsa spooned over ham slice or pork chop.
Serves 4
