CHOCOLATE RUM CAKE
- BON APPETIT
Ingrediants:
1/2 c. Rum
8 oz. Bittersweet chocolate
1 c. Butter
1 c. Sugar
6-7 Eggs, separated
2/3 c. Flour
SAUCE:
1/2 c. Brown sugar
1/4 c. Whipping cream
2 T. Butter
3 T. Rum
1 T. Corn syrup
Directions:
Butter/flour 9" springform pan.
Boil rum till reduced to 2 T; cool.
Melt chocolate/butter; cool slightly & wisk in egg yolks and rum.
Beat whites till stiff; fold into chocolate and sprinkle flour over batter &
fold in; bake @ 300 for 35-45 min.
;cool in pan.
SAUCE:
Combine ingredients in saucepan; stir over medium heat till sugar dissolves
boil with out stirring till sauce is reduced.
Rewarm before serving.
Whip remaining cream and decorate top of cake and serve with sauce or pour
sauce over cake and top with whipped cream.
