I have been making this meal since I started cooking. It turns out everything 
and none is left at the end.
I hope you enjoy it and I thank my mom for showing me how to make this 
wonderful meal. We are Portuguese so we use olive oil when cooking this recipe 
too.

Preheat your oven to 375 degrees

1 roasting chicken (small to medium size)
about 6 to 8 medium potatoes (peeled, washed, cut into quarters )
half a package of small carrots (the kind you'd take to work to snack on)
half an onion ( diced)

2 TBSP olive oil
a dash of balsamic vinegar

Spices: you will need
chicken spice pepper (fresh ground is best)
cilantro (I use watkins, but any will do)
salt (pinch)
pinch of Cinnamon
a few grains of garlic spice

combo of ketchup and water (mixed together to make a sauce)
sprinkle of honey one stick of butter (cut into 3 )

You will need a roasting pan with a lid. Pam the roasting pan, bottom and sides. Add to the pan the olive oil and balsamic vinegar. Rinse the chicken and place it into the pan on top of the oil and vinegar. Now if you have not done so, peel the potatoes and place the cut up pieces along the front, back and sides of the chicken. Add the carrots the same way (remember use the small carrots). Now sprinkle the diced onion on top of the chicken and veggies. Add your spices, Sprinkle some honey on the top of the chicken and veggies. Then mix together the ketchup and water to make a sauce. Using a spoon pour the sauce on the chicken and veggies. Make sure you get sauce on everything. Cut the butter into 3 squares and place one in front on the potatoes and carrots, one on top of the chicken breast and one in the back on the potatoes and carrots.
Place the lid on the pan, and place in the oven. Roast for 1 hour and 15 mins. 
Then remove from the oven and baste. Cut the skin attaching the thighs to the 
body. Check the veggies to see how they are cooking.  Place the lid on and cook 
for another 10 mins. (if the veggies and chicken are done, then cook for 
another 10 min. uncovered). After the 10 mins covered, then uncover and cook 
for another 10 mins.
The Chicken should have a brown colour and fall off the bones and the veggies should be just perfect with a lite tomatoes like sauce. I usually make a nice green salad to have with it.
