Orange Streusel Cake

Vegetable oil cooking spray
1/4 c. firmly packed brown sugar
1 tbsp margarine, melted
2 c. all-purpose flour
1/3 c. sugar
2 tsp baking powder
1/2 tsp salt
1/2 c. skim milk
1/2 c. orange juice
1/3 c. vegetable oil
1 egg
1 tsp vanilla
2 tsp grated orange rind

        Preheat oven to dg375. Lightly spray a 9-inch round baking pan with
vegetable oil cooking spray.

        In small bowl combine brown sugar, margarine and flour to make crumb
topping. Set aside.

        Sift remaining dry ingredients together in a bowl. In another bowl
combine remaining ingredients. Stir to mix well and set aside. Make a
well in the center of the dry ingredients mixture. Add liquid mixture
to dry ingredients. Stir just to mix well--do not overbeat. Spread
mixture into prepared baking pan. Sprinkle topping ingredients evenly
over batter. Bake 30-35 minutes. Serves 8.
