Baked Pears Framboise

4 lg, partially ripe Barlett pears

Lemon juice

2 tbsp butter

3/4 c dry white wine

1/4-1/3 c granulated sugar

3 tbsp raspberry syrup

1/2 c finely chopped blanched almonds

1 c fresh raspberries, for garnish

Heat over to 350°F. Peel pears, cut each in 1/2 lengthwise; then carefully core 
them. Place cut side down in well-buttered baking dish. Sprinkle pears with

lemon juice & p! lace tin y bits of butter on each 1/2. Set dish aside. In 
saucepan, combine wine, sugar & 2 tbsp raspberry syrup. Bring to boil. As soon

as sugar is dissolved, pour wine over pears. Place baking dish in over & bake 
15-20 min or until tender when pierced with tip of sharp knife. Transfer

pears to ovenproof serving platter, placing them cut side down in decorative 
pattern. Place flameproof baking dish over high heat & cook pan juices until

well reduced & syrupy. Add remaining tbsp raspberry syrup. Taste pan juices, if 
too sweet, add a little more lemon juice. Spoon sauce around pears. Sprinkle

pears with almonds. Heat broiler. Place pears in broiler, but just until 
almonds are nicely crisp. Be sure not to burn them. Remove dish from broiler &

cool to room temp. Place fresh raspberries in sm mound in center of dish & 
sprinkle lightly with sugar. Serve pears at room temp with an optional side

bowl of sweetened whipped cream.
