UNCLE BILL'S WHIPPED SHORTBREAD COOKIES
Despite the fact I am submitting this Uncle Bill is one of our newest
members and I hope that we will see more of his wonderful recipes.
He has a wonderful website and he is member 432 if you want to go and
mozzie over there. You all know how much I adore beetroot and I must be
the only person ledt on the planet that cooks beetroot cake, well the
first thing I saw on Bill's site was a beetroot recipe, it looks
scrummy.
Anyway enough blurb from me, here is Bills recipe

Makes about 36 cookies
Ingredients
1 cup butter, softened
1 1/2 cups all-purpose flour
1/2 cup icing sugar (not granulated sugar)
1/4 cup red maraschino cherries (optional)
1/4 cup green maraschino cherries (optional)
Preheat oven to 350 F.
In a mixing bowl, using an electric mixer, combine butter, flour and
icing sugar and mix until mixture is a smooth consistency.
Prepare a cookie sheet lined with parchment paper.
Spoon cookie mixture onto the cookie sheet by spoonfuls, spacing about 2
inches apart.
Cut maraschino cherries into quarters and place one piece in the middle
of the cookie. (This is for decorative purposes only.)
Bake in preheated 350 F oven on the middle rack for 15 to 17 minutes or
until bottom of cookies are lightly browned. DO NOT OVERBAKE.
Remove from oven and let cool on cookie sheet for about 5 minutes.
Transfer to a wire rack to finish cooling.
Store in a container with a lid and separate each layer with wax paper.
NOTE: You may also use half an almond, sprinkles or sugar crystals on
the cookies.
