Chocolate Walnut Macaroons
1 4-oz. can walnuts, (1 cup)
2 squares (1-oz. each) unsweetened chocolate
1 14-oz. can sweetened condensed milk
1 3-1/2-oz. can flaked coconut (1-1/3 cup, packed)
3/4 tsp vanilla extract
1/4 tsp salt
Reserve 1/4 cup walnuts for garnish. Coarsely chop remaining walnuts
and set aside.
In heavy 2-quart saucepan over low heat, heat chocolate until melted,
stirring frequently. Remove saucepan from heat. Stir in sweetened
condensed milk, coconut, vanilla, salt and chopped walnuts until well
mixed.
Preheat oven to dg350. Grease well 2 large cookie sheets. Drop
mixture by tablespoons, about 1 inch apart, onto cookie sheets. Top
each cookie with a piece of reserved walnut. Bake 12 minutes. Remove
to wire racks to cool. Store in tightly covered container.
Makes about 3 dozen--90 calories each.
