MUSTARD GREEN CASSEROLE

 

2 c. boiled mustard greens

1 med. onion

1/2 lb. bacon

1 egg

1/2 c. cornmeal

1/2 c. Bisquick

1 1/4 c. milk

 

Boil mustard greens until very tender and drain. Cut the bacon

in pieces and fry until it begins to crisp. Set aside.

Saute onions in bacon drippings. Drain all the bacon drippings.

Drain all the bacon drippings from the onions. Mix mustard,

onion and bacon and spread in a pie plate. Set aside.

 

Beat the egg in a separate bowl and add 1/4 cup milk. Add the

cornmeal, Bisquick and the rest of the milk, a little at a time.

Mix well and pour over mustard mixture. Bake in a 400 degree

preheated oven for 25 to 30 minutes.
