Bacon-cheddar Potato Skins
4 baking potatoes, scrubbed clean 
Vegetable cooking spray 
4 turkey bacon slices 
3/4 cup low-fat cheddar cheese, shredded 
1/4 cup nonfat sour cream 
1 tablespoon fresh chives, minced
Preheat oven to 425 degrees. Bake potatoes until done 
(about 1 hour, depending on size). Allow to cool slightly. 
Cut in half, scooping out most of the pulp (but leaving 
about a 1/4 inch border). Place hollowed out potatoes 
on baking sheet. Spray with cooking spray. Bake until 
crisp (about 8 minutes). Meanwhile, cook bacon until 
crisp; drain thoroughly and crumble. Divide cheese evenly 
between shells. Bake until cheese melts (about 5 minutes). 
Top with bacon, sour cream and chives. Makes 8 servings
