CHICKEN PARMESAN
Yield: 8 servings "Forbidden Foods Diabetic Cooking" INGREDIENTS: - 1 (26 ounce) jar seasoned tomato sauce - 20 ounces skinless, boneless chicken breasts - 1/2 cup shredded part-skim mozzarella cheese - 1/2 cup grated Parmesan cheese DIRECTIONS: Preheat the oven to 350°F. In a 9x13-inch baking pan or large casserole dish, spread half of the tomato sauce. Place the chicken on the sauce, then pour the rest of the sauce over the chicken. Sprinkle the mozzarella cheese on the chicken, then sprinkle on the Parmesan cheese. Cover and bake until bubbly and cheese is lightly browned, 30 minutes.
