Stuffed Flank Steak
1/3 c. chopped onion
2 tbsp butter
4 c. dry bread crumbs
1/2 tsp poultry seasoning
2-1-1/2 lb. flank steaks scored
1 lb. canned tomatoes
1/4 c. chopped onion
1/4 c. ketchup
1/4 c. chopped green pepper
1 3-oz. can sliced mushrooms, drained
In skillet cook 1/3 cup onion in butter, add bread cubes and poultry
seasoning, 1/2 tsp salt, dash pepper. Sprinkle with 1/4 to 1/2 cup
water to moisten. Spread stuffing over steak and roll up lengthwise.
Fasten with wooden picks. Roll in flour, brown all sides. Season with
salt and pepper, add tomatoes, 1/4 cup chopped onion, ketchup and 1/2
teaspoon salt. Cover and simmer 1-1/2 - 2 hours until tender. Add
remaining ingredients last 15 minutes, remove steaks to warm platter.
Mix 1 tablespoon corn starch to 2 tablespoons cold water and stir into
sauce until thick.
