Printed from COOKS.COM
1/3 c. soft butter
1/3 c. light corn syrup
1/2 lb. (4 c.) sifted confectioners' sugar
Blend butter, corn syrup, salt and vanilla. Gradually mix in
confectioners' sugar. Knead until blended and shape in 4 or 5 rolls 1
1/2 inches diameter. Wrap each roll in waxed paper and chill. 2 c. sugar
1 c. corn syrup 1/2 tsp. salt 1/2 c. butter 1 tsp. vanilla Chopped
pecans
Heat light cream. In a heavy saucepan mix sugar, corn syrup and salt.
Add 1 cup of the cream and cook, stirring 10 minutes. Add remaining
cream very slowly so that mixture continues to boil. Add butter, 1
teaspoon at a time. Cook slowly until small amount of mixture forms a
hard ball when dropped in very cold water (248 degrees). Add vanilla.
Pour into a shallow pan. Using tongs coat each roll with hot caramel and
cover with nuts. Let stand until firm. Makes about 5 pounds.
Things that were hard to bear are sweet to remember.
