Chocolate Cheese Fudge 

2 pounds confectioners' sugar
1/2 cup cocoa powder
1 cup butter
8 ounces processed cheese
11/2 teaspoons vanilla
1/2 cup chopped pecans 
Mix sugar and cocoa powder together; set aside. Melt butter and cheese over low 
heat, stirring constantly. Remove from heat. Stir in vanilla. Pour over 
sugar-and-cocoa mixture. Mix quickly. 
Spread in a buttered 13 x 9 x 2-inch pan. Sprinkle pecans over top and press in 
lightly. Let stand two hours. Cut into squares. 
Servings: Makes 117 (1-inch) pieces.
