A Favorite Zucchini Recipe That is Quick and Easy 
Keys:  Side Dish Vegetables     Hot 
Yield: 1 
Ingredients: 
      1 1/2    cup  shredded zucchini (raw) 
          1      x  egg 
        1/3    cup  Parmesan cheese 
  1/2  cup  biscuit mix (i.e. Bisquick or Jiffy, etc.) 
                    salt and pepper to taste 
Method:
Mix all together and drop by large spoonful onto medium-hot skillet to
"fry." I use a small amount of butter or margarine like you would cook
pancakes adding a bit more butter or margarine when I flip them over to
cook on the other side. Serve hot.
