Fiesta Taco Pie

4 cups tortilla chips or crushed-up Fritos (Crushed fine in a

blender or food processor)

1 to 2 egg whites, beaten (depending upon the size of the egg)

1 pound chuck hamburger (chuck has more fat-therefore, more

flavorful for Mexican food)

3/4 cup chopped  Bermuda or yellow onion

1 clove garlic, minced (not the whole garlic plant--just a pod!)

1 can Ranch Style Beans, drained

1/2 cup tomato salsa (a salsa with a real good flavor)

1-2 teaspoons chili powder

3/4 teaspoon salt

2 cups shredded cheddar cheese

2 cups shredded iceberg lettuce

1 medium tomato, diced

Sour cream

guacamole (guacamole recipe to follow)

 

Preheat oven to 400 degrees. Coat a 10 inch glass pie plate

with cooking spray.  Mix chips with egg white/s and press evenly

into the pie plate to form a crust.  Bake until crisp, about 15

minutes.

Fry or boil the hamburger depending upon your tastes. I like to

boil my beef because, believe it or not, it looks prettier,

crumbles better, and the taste is much better.  (Crumble the

meat after it cools!)  If you boil the meat, you can drain it

out of the water with a slotted spoon or with a colander.  If

you fry it, be sure and place it on some absorbent napkins to

get the grease out (same if you boil it).

Take a skillet and combine the drained hamburger meat, Ranch

Style beans, salsa, chili powder and the salt.  When adding the

chili powder, add one teaspoon and taste it. If you want a

little more flavor add the second teaspoon. I always taste when

I cook!

Simmer on a very low fire for approximately 10 minutes-stirring

every once and a while.  Take the mixture off of the burner and

stir 1/2 cup shredded cheddar cheese into the beef mixture.

Pour this luscious mixture into your chip crust pie

plate.  Sprinkle with the remaining cheddar cheese over the

pie.  Then spread the guacamole over about 6" of the pie

starting with the middle of the pie first.  Then top with your

diced tomato.

When serving cut with a pie cutter. Put on a regular serving

plate and garnish with a dollop of sour cream and then sprinkle

with more grated cheese and drizzle with salsa. Note: I also

take a mixture of sliced green olives with the pimento stuffed

in them and a mixture of sliced black olives and sprinkle around

the plate.  Add some  chopped white or yellow diced onion.

Sprinkle with a little paprika.  Remember food must not only

taste good; but if it is pretty, it will also psychologically

taste good!

 

Now for the guacamole

 

1 average size avocado, skin removed

1-2 Heaping Tablespoons of sour cream

1-2 Heaping Tablespoons Hellman's Mayonnaise

Dash or 2 of salt and pepper

 

Mash the avocado with a potato masher leaving some chunks.

Slowly add your sour cream and the mayo and the salt and the

pepper.  Remember, taste as you make it!
