Mashed Peas with Garlic and Oregano Serves 4 (1/2 cup each). | Source: Hy-Vee Test Kitchen. 1 tsp Grand Selections olive oil 2 shallots, thinly sliced 1/3 c. water 1 (16 oz) package frozen Hy-Vee sweet peas 1 tbsp chopped fresh oregano 2 tbsp Hy-Vee lemon juice 2 garlic cloves, minced Hy-Vee salt and Hy-Vee pepper, to taste All you do: Heat olive oil in a large skillet over medium heat. Add shallots and cook until tender, stirring occasionally. Add water and peas; bring to boil. Cover and cook 5 minutes or until peas are tender. Place pea mixture in food processor. Add oregano, lemon juice and garlic; process until smooth. Season with salt and pepper, if desired.
