CHOCOLATE MINT SQUARES
These squares are extremely chocolatey, but the filling provides a
crisp taste of mint. Creme de menthe is a liqueur, and it comes in
both green and white varieties ("white" creme de menthe is actually
clear). The two taste identical--but some people like anything
mint-flavored to also be green. Note: Keep the bars refrigerated, but
remove them from the refrigerator a few minutes before serving. Makes
24 bars. Per bar: 291 calories, 14.3 grams fat, 64 milligrams
cholesterol, 40.6 grams carbohydrates, 1 gram fiber, 2.4 grams
protein, 172 milligrams sodium.
1 cup sugar
1/2 cup butter
4 eggs, at room temperature
1 cup flour
1/2 teaspoon salt
16 ounces chocolate syrup (Hershey's or similar)
1 teaspoon vanilla
Filling:
2 cups powdered sugar
1/2 cup butter
4 tablespoons creme de menthe
Frosting:
6 tablespoons butter
1 cup semisweet chocolate chips
Preheat oven to 350 degrees. Grease a 9-inch by 13-inch pan. Cream
sugar and butter; mix in eggs one at a time, until well blended. Stir
in syrup and vanilla. Stir in flour and salt; mix well.
Bake in prepared pan 30 minutes. Cool completely.
In a saucepan, combine filling ingredients until butter is melted and
sugar dissolves. Pour filling over bars while still warm. Cool in
refrigerator.
In a saucepan, melt together frosting ingredients. Spread over cooled
bars. Refrigerate to harden.
