Tuna & Spinach Salad:
Makes 4 servings
A lovely, low-fat salad with Mediterranean flair. It*s
hearty and satisfying, but requires no real cooking
beyond opening a few cans.
6 cups baby spinach
2 tomatoes, sliced
2 (7 ounce) cans chunk tuna
1 (15 ounce) can artichoke hearts, drained and halved
1 cup canned white beans, rinsed and drained
4 ounces sliced mushrooms
2 tablespoons white wine vinegar
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon water
Wash and dry spinach leaves and lay them in a large
salad bowl.
Layer on the sliced tomatoes.
Add tuna, artichoke hearts, white beans, and
mushrooms.
Whisk the oil, vinegar, lemon juice and water together
to make a dressing.
Drizzle the oil and vinegar mixture over the salad,
toss and serve.
