BEEF STROGANOFF (WITH CARROTS AND MUSHROOMS) 
  MAKES: 6 SERVINGS
   
  2 tbs butter
  1 cup chopped onion
  1/2 pound sliced white mushrooms
  12 oz egg noodles
  1/2 tsp salt
  1 1/4 pounds beef brisket chunks in gravy
  10 oz pkg frozen baby carrots
  8 oz container sour cream
   
Heat 1 tbs butter in skillet. Add onion, saute until softened.
Add mushrooms, saute 5 min.
Bring pot of water to boiling,
add noodles & cook according to package directions,
adding 1/2 tsp salt. Drain, return noodles to pot
& toss with remaining butter.
Add brisket & gravy & carrots to onion mixture in skillet. Heat through.
Stir in sour cream, heat.
SERVE THE BEEF MIXTURE OVER THE NOODLES.
