KRAZY CAJUN CAKE
2 c. all-purpose cake flour
1 1/4 c. sugar
2 tsp.  baking soda
1/2 tsp. salt
2 eggs, slightly beaten
1 1/2 cans crushed  pineapple

Beat eggs; add dry ingredients and pineapple. Mix well
and  pour into greased and floured pan. Bake in moderate oven
at 350 degrees.  Remove from oven and cool. Ice with Cajun
Cake Icing.

Krazy Cajun Cake  Icing:
1 c. sugar
1/2 large can evaporated
milk
1 c. shredded  coconut
1/2 c. butter
1 tsp. vanilla extract
Mix all ingredients in  saucepan over low heat until
butter is melted. Increase heat and boil. Reduce  heat and
cook 5 minutes. Stir in 1 cup pecans and ice Cliff's  Cajun
Cake.
