Southwest Chicken Bundles 6 boneless, skinless chicken breasts 3 oz. Pepper Jack cheese, shredded 3-4 oz. cream cheese, softened 6 thin slices bacon salt & pepper, to taste 1/3 cup Ranch dressing 1-1/2 cups Salsa or Picante sauce Flatten chicken breasts to 1/4" thickness. In small bowl, combine the cream cheese and Pepper Jack cheese. form into 6 separate balls. Season each breast with salt & pepper and then fold them around the cheese balls. Cut each piece of bacon in half and form a "X" on top of each chicken bundle. Secure ends with toothpicks. Pour 1 cup of Salsa over chicken bundles. Place bundles in 9x13 baking dish. Bake at 350 for 30 minutes or until chicken is done. Remove chicken from oven and remove toothpicks. In separate bowl combine remaining 1/2 cup Salsa and the ranch dressing. Pour over bundles once served on individual plates.
