RANCHO CORN CASSEROLE
   6 slices bacon, cut up
   1 jar (4 1/2 ounces) mushrooms
   2 tablespoons diced onion
   2 tablespoons diced green bell pepper
   2 cans (12 ounces each) corn
   Salt and pepper, to taste
   3/4 cup grated cheddar cheese
   In
 a skillet, fry bacon then drain. Add mushrooms, onion and green pepper; saute 
lightly.
Drain corn and add to skillet mixture. Add salt and pepper and heat thoroughly. 
Place
in casserole dish, sprinkle top with cheese. Bake in 325 degree oven until 
heated
through and cheese is melted (20-30 minutes).
