Oatmeal Cake

Preheat oven to dg350.

1 c. oats
1-1/4 c. boiling water.
1 stick margarine
1 c. brown sugar
2 eggs, beaten
1 c. white sugar
1 tsp vanilla
1-1/3 c. flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg

Pour water over oats.  Let stand 20 minutes.

Cream margarine with sugars and mix with oatmeal.  Add eggs and
vanilla.  Sift dry ingredients and add to above mixture.  (Batter will
be thin.)  Bake for 1 hour to 1-1/4 hours.  Let cool 15 minutes before
removing from loaf pan.

Can also be baked in three small loaf pans to cut baking time down to
about 40 minutes.
