I'm coming in late to this thread, so forgive me if I'm not on topic.  
 From what I just read, it sounds like the same problem we have when 
publishing a live stream.  We don't have the server recording, so I'm 
guessing it's not directly related to recording to disk.  Our experience 
is that every 10-15 seconds, the video stream will freeze for a half 
second and then continue.  It's a regular pattern, so we ruled out a 
network issue, just never took the time to isolate it beyond that.  Our 
typical stream is 320x240, 15 fps, 11Khz, 80% quality.
