As has already been mentioned, you will have no control over the
database architecture for any of these systems that you mentioned as it
is generated and managed by the CMS. Most vendors don't like you going
poking around inside their databases as there's too much potential for
things to become corrupt; you're liable to invalidate any support if you
do. We've used both Reddot (OpenText) and Vignette here and both are the
same; I can only imagine that EMC follows the same line.

We've only ever been into the database at the support desk's request to
locate information for them.

Our client will select a CMS in the next three months. It will be
either OpenText,EMC or Vignette. In the interim, I would like to go
ahead and start architecting the database. However, since most of the
functionality will be handled by the CMS (workflow, content
administration) I am not sure how much control I will have to give up
on the database in order to use a CMS for these functions. I am
looking for any advice on how best to handle using the database and
having the tables be as custom as possible. Any pointers would be
appreciated.
