I've had experience running both RedDot CMS and RedDot LiveServer on Virtual W2k3 machines. They were set up on Windows-based host machine with all the power you need (I forgot the details.)
On the virtual LiveServer, I have to say I have been pretty satisfied with the performance. Or, to put it more honestly, I just did not notice anything different than with a real box. On the CMS-side, I've received a lot of performance complaints when it comes to SmartEdit data entry and list-based batch publishing; since the client did not have the hardware to re-configure the server farm, the users had to get used to it. Like a lot of other things with RedDot. So I cannot say with evidence that things on the CMS side would have been better if I moved the server to a real box.
