Burritos and Salsa

I hope your family enjoys this meal as much as mine!  My 19-year-old  son, 
especially, always requests this and has for years.  
 
Burritos
Serves 4
 
1 lb. Ground Beef
1 Can (16 oz.) Refried Beans
1/2 lb. Shredded  Cheddar Cheese
8 Flour Tortillas (6 inch)
Salsa (see recipe below)
Sour  Cream, optional
Black Olives, optional
 
Cook the ground beef until no longer pink, then drain off the grease. Put  
the refried beans into a microwave-proof bowl and heat about 1 1/2 minutes or  
until hot.  Heat the tortillas in the microwave about 1 1/2 minutes  also.  Let 
everyone assemble their own burritos by spreading a thin layer  of refried 
beans on the tortilla first, then adding the cheese, then the  beef.  Top with 
salsa and other optional ingredients then roll up (fold 2  sides in first, then 
roll lengthwise).  
 
Food Processor Salsa
 
15 oz. can of Tomato Sauce
1/2 of a 15 oz. can Water
1/2 of a  Jalapeno Pepper
1/4 of a Medium Onion
1 Garlic Clove
2 Tbsp.  Cilantro
Salt to taste
Garlic Powder to taste
 
Put jalapeno and garlic into a food processor fitted with chopping blade  and 
process until finely minced.  Add onion and process until onion is the  size 
you like.  Add tomato sauce, water, and cilantro and pulse until  combined.  
Taste, then add salt and garlic powder to taste.  Serve as  a dip to tortilla 
chips or with burritos, tacos, quesadillas or other Mexican  dishes.
