Sets the catalog environment context properties (engine name and engine
version) for Iceberg operations. This ensures that downstream catalogs
and metastores can correctly track Impala as the processing engine.
Testing:
- Extended test_iceberg.py with a dedicated test case to assert that
'engine.name' and 'engine.version' are correctly written to the
metadata properties.
- Ran frontend unit tests to ensure compatibility.
