Well, I should not have used the term "running".  More accurately I
should have said "installed" or "configured" which is basically exactly
where you are at.  That particular system has the Xen kernel and VMware
is installed and configured (modules compiled).  I'm not sure I have
ever actually tried to power on a VMware session while running the Xen
kernel, it may very well crash just like your system.

It's a test system at work so I can give it a spin tomorrow but my guess
is it will have the same problem you are having when running the Xen
kernel.  I'm pretty sure I remember reading that VMware on Xen wouldn't
work.  I thought you had proved me inaccurate when you said you had it
working.
