Just edit /etc/sysconfig/kernel and choose your default kernel...

I was wondering if you choose virtualization, it only seems to install
the xen kernel.  Is it not a choice to use the regular kernel, and only
have the xen kernel installed in case you decide to create a virtual
host someday?
