The latest systém I installed was RHEL 5.1 server. I chose "virtualization" as
an install option and it installed both Xen and non-Xen kernels, defaulting to
Xen kernel. And even if it would not, you can always install the non-Xen kernel
after the installation of RHEL finishes.

You misunderstand, a non-xen kernel doesn't get installed. I have the same
thing on CentOS.
