I had a short answer, but i realized it wasnt very complete or helpful so
i'll still try and be brief.

1: Easiest way to mannage applying only security errata to your systems in
a semi-automated method would be with RHN/Satellite/Spacewalk.
If you don't like the first 2, check out Spacewalk.  If you don't know, its
the recently opened version of Satellite.

2: Hard way of implementing what you want is to manual go through the
errata and select the packages you want to apply and add them to your yum
repository.

3: A fresh RHEL5.2 installation is effectively the same as a RHEL5.1 that
is completely up to date
    possible exceptions:
      1: i don't know if the redhat-release rpm updates (never thought to
check, but i think it does)
      2: any packages removed from RHEL5.2 won't be removed during update
if you have them installed unless another package obsoletes them

There is something nagging the back of my mind about a way to subscribe to
certain kinds of updates, but I've never seen it, and i think it may point
to point 1.
