My guess is this is because both nics are on the same network/subnet and the default gateway is being set to use eth0. When you unplug eth0 it still retains the ip and default gateway pointing to eth0 but once you disable it it uses the only remaining interface, eth1. This is just a guess though. You could check this by running "route -n" after unplugging the eth0 cable and seeing what it shows. Are you running a GUI or using only the command line?
