That's interesting, because my version of iTunes (6.0.5.20) is definitely adding the iTunNorm tag to all my (AAC, ALAC, not MP3) music, even though I'm pretty sure I've never switched Sound Check on. It's certainly not on at the moment but tracks I've added in the last few days all have the tag. What version of iTunes are you (barcar) using? I think we need SS to look at the iTunes Sound Check setting (which may not be possible) or to supply an option to ignore the iTunNorm tag.
