The simplest way would be to fire up mp3tag or a similar tagger (if you
haven't already got one of these, get one). Then you can manually edit
the track number tag in each tag.
For a slightly smarter solution, you could for example make sure the
track number was always encoded in the track title ("1 - Some song or
other") in which case a little tricky work with mp3tag would almost
certainly allow you to automatically read that number from every track
title and pop it in the track number tag.
I don't think you've said how you are capturing the WAVs from the LP -
you are presumeably using some tool or other, not sure if there is a
smart way to do it at that stage.
