Replay gain information is added to the file as it is ripped and then used by SB to equalize volume, if it is turned on. I haven't set up EAC in awhile, but it looks like you have set it up to provide replay gain data. Adding album art is separate from the ripping process. There are a number of ways to do it. I used Tag&Rename to look up album art from Amazon and add it to each album folder under the name "cover.jpg." I think there are more automated ways to do it, but I did it one by one and scanned CD covers that weren't available on Amazon.
