Martin_z - you will need to do a complete clear and rescan of the database if you are going to clear out info that you've deleted from the files.
Slimserver gets its info from just two places - the tags in the files and, if there are none, by guessing from the file path/name. But it seems from what you've said that winamp is also finding the unwanted data, which confirms that it is still in the files somewhere...
