I really don't think it takes that much CPU power to encode these days.
I do FLAC encoding on P3-450 and Via C3 1ghz cpus without any trouble. 
Personally, I go for the lowest energy usage CPU I can find.  Saving
electricity and making the machine as quiet as possible is most
important to me.
