I use Anapod Explorer by Red Chair software.  You don't need iTunes
installed at all.  It can convert from almost any format or bit rate
including FLAC and convert it on the fly to any mp3 rate you want
directly to the iPod.

It can be a tad flakey at times, but it does the job.
