dbPowerAMP is a good ripper which includes AccurateRip. I wouldn't let a "silly GUI" stop me from using this good, simple ripper.
Also, you usually do NOT want to "normalize" audio tracks. Normalization will alter the original waveform. The proper way to do level matching is by adding ReplayGain tags to your files.
