I prefer the single tag with delimiter approach because you can populate the ARTISTSORT tag with the same delimiter and slimserver picks up the right sort order for all artists. If you have multiple artist tags you would have to use multiple ARTISTSORT tags as well but this is error-prone because slimserver doesn't know which sort and artist tags need to go together. The downside to this approach is that most other players and management software can't split tags based on an arbitrary delimiter.
Another point to keep in mind when using multiple artists (in one or many tags) is the compilation behaviour of slimserver. If there is more than one artist in an album slimserver treats it as a compilation. I use multiple artists only reluctantly. I don't add featured artists to the artist tag but append them to the song title. This way a search can still find them but they don't interfer too much with the main artists. If an album is by more than one artist I set the COMPILATION tag to 0 to make sure they don't end up in the various artist bin. This works fine for flac files or any other format that allows free form tags.
