Actually, iTunes does a good job of tagging AIFF files.  I've ripped our
Sound Effects library (some 25,000+ FX) from CD to AIFF using iTunes.  

Now, that being said, I'm SURE the way iTunes tags them is NOT a
standard, as AIFFs weren't intended to be used this way.  WAV files are
pretty much the same.  BWAV (Broadcast Waves) are different, but only
pro apps are using BWAV at this point.

I really don't understand why you'd want to rip as AIFF anyway.  Apple
Lossless (or FLAC) is truly lossless and takes half the storage space
as native files (AIFF/WAV).  

My preference is iTunes ripping as ALAC, mainly because I prefer the
way iTunes handles tagging and multiple libraries.

>From ALAC I can transcode to anything else for my iPod.  Also, once
everything is ripped ALAC I use a shareware program called iVolume that
does a GREAT job dealing with ReplayGain.
