For anyone doing a similar process (ripping to FLAC, transcoding to MP3), and like me you're using a multi-processor/core computer (MacPro), you can get a bigger bang for your buck using Max to do the transcoding and increasing the number of simultaneous processes (Preferences->General->Number Of Simultaneous Encoders).
It can recreate the folder structure and embed album art like 'flac2mp3' but because you can make it work with multiple simultaneous encoders the processing time is slashed dramatically. I did some tests and where 'flac2mp3' was taking 2-3 minutes to transcode an album, it was taking about 40 seconds with Max. On the other hand, I've got a programmer friend who has been looking at the 'flac2mp3' script and he's just emailed me what he claims to be a quasi multi-threaded version i.e. it processes more than one file at once. I'll give it a try and see what happens. Will report back if it's successful.
