mp3tag is the best windows based application for editing tags. mp3tag allows you to see every tag on a file.
If you have untagged music where you don't know what it is and want to retrieve tags from online sources MusicBrainz Picard tagger is quite clever. It can scan your music and recognize music with incorrecet or no tags as well. It is a bit geeky though.
